fish fillet
Fish fillets are pieces of flesh from the sides of a fish. You don't have to gut or prepare the fish in any way to begin to cook with it. You can buy them from the frozen cabinet in the supermarket, but it is more fun to seek out the dresh fish counter and buy them off the ice. What sorts can you buy? All sorts, smoked and unsmoked. Amongst the more familiar there are cod, haddock and plaice; salmon and trout are great and often on offer; smoked haddock is amazing steamed; smoked mackerel can be eaten cold! Buy your fillets without batter or breadcrumbs, the less processed the better. Fish steaming is easy- see the skills section.
