Black peppercorns in a grinder

Virgin olive oil
+ equipment :  
Oven proof dish or baking tray, tablespoon, tin opener.
1) Switch on the oven on gas mark 6 / electric 200 centigrade.
2) Pour the ratatouille onto a tray and place the fish and basil on top. Drizzle some olive oil over everything. Grind black pepper over the top.
3) Cook for 15 minutes.
IngrediPlus: You could use any Mediterranean veg you already have, eg. tomatoes, courgettes, aubergines, mushrooms. Chop them up and proceed as for tinned ratatouille. Serve with rice, pasta, couscous; new, old or baked potatoes.
